Introduction to Nutrition

Course Description:

Study of basic nutrition relative to food, nutrients, and health; includes the biochemistry of the essential nutrients, nutritional status assessment, food labeling and regulation, nutrition relative to specific diseases, and current nutritional issues.  Class activities include an individual diet analysis; health assessments; and analysis of food labels, health claims, and reliable nutrition information.

The instructor is Megan Stratman. Mrs. Stratman has been teaching online for San Juan College since Fall of 2008.  She has a BS in Dietetics.

What materials will I need?

You will need the following materials to complete this course successfully:

  • Wardlaw’s Perspectives in Nutrition 8th Edition, by Carol Byrd-Bredbenner, Donna Beshgetoor, Gaile Moe, & Jacqueline Berning  (ISBN # 978-0-07-296999-3)
  • NutritionCalc Plus 3.0. If you purchase your textbook new from the bookstore this semester, then the text should be bundled with the online version of NutritionCalc Plus 3.0 program. If you do not purchase the NutritionCalc Plus 3.0 program with your textbook, then you can purchase it directly through McGraw Hill at www.mhhe.com/ncp3.
  • A reliable computer and an Internet connection (preferably high-speed). Make sure your computer meets the technical requirements listed in “Getting Started With Online Learning” (Here is the link: Getting Started)

 

Will I have to meet face-to-face with the instructor or other students?

There are no required face-to-face meetings for this class everything is done online.

Will the course be hard for me?

This is a challenging course for most students.  The class involves the study of nutrition science and will require a lot of time. If you do not learn well on your own or are unsure of yourself on the computer, you should reconsider whether you are suited for this course right now. 
 

How much time will I have to spend per week on this course?

As a rule for every hour you are in class you need to spend a minimum of 2 hours studying. So, 3 + (3 x 2) = 9 hours per week and some students may need more. Don't sign up for the course unless you are able to commit a great deal of time to it.
 

Can I go at my own pace?

There is a timeline with this class, but some assignments can be turned in ahead of time.

What do I need to do if I decide to take this course?

  1. Sign up for the course.
